Depending on what is to be done with the land, there are two options: grinding and removing the stumps. The difference is that grinding removes the stump only about a foot below the surface of the ground, whereas removal will take the whole body of the stump out along with a good portion of the roots. If you are planning to do a significant amount of planting or changing of the landscape, removal is probably going to be the route you want to go.
For us, land clearing includes tree and stump removal, debris cleanup, and brush removal. It can also involve earthworks to change the contour of the ground.
